Won ton soup, crab ragoon, sweet & sour chicken and even orange chicken to name some of my favorite dishes. It's save to say that I love Asian cuisine. I'd pick Asian food over Mexican any day!

Thai Salmon

Thai Salmon Thai Salmon From Sara Moulton 1 bunch cilantro 1 to 1 1/2 pounds fresh salmon fillets 1/8 teaspoon salt 1/8 teaspoon Asian white pepper or black pepper if you can't find it 2 tablespoons extra-virgin olive oil 2 tablespoons green curry paste 4 cloves garlic 1 shallot 2 kaffir lime leaves 1 lime 2 tablespoons fish sauce 1/4 cup white wine 1/4 cup chicken or fish stock Cooked jasmine rice, for serving (optional)
  1. Preheat the oven to 375 degrees F.
  2. Place the bunch of cilantro in a bowl and let it soak for a few minutes to remove the dirt.
  3. Put each salmon fillet on a piece of parchment paper, flesh side up. Season the fish with salt and pepper. Pour the olive oil over the fish, then smear the green curry paste on top of the salmon.
  4. Dice the garlic and shallots and sprinkle them on top, then place the lime leaves on top, as well.
  5. Cut the lime in 1/2 and squeeze the lime juice over the fish.
  6. Fold the parchment paper around the fish creating a pan like shape.

THAI-INSPIRED SCALLOPS WITH NOODLES Recipe adapted courtesy of Epcot Catering Photo courtesy of Eat Better America 2 cups orange juice 1 teaspoon orange juice concentrate 1/2 pound unsalted butter 3 tablespoons sweet Thai chili sauce, found in Oriental food section 2 tablespoons sesame seed oil 1/4 cup tamari (soy sauce may be substituted) 3/4 tablespoon finely chopped fresh chiles (recommend: Hungarian wax chiles, or poblano pepper and 1/8 teaspoon ground cayenne pepper) 2 stalks bok choy, 1-inch pieces sliced on the diagonal 1 cup fresh broccoli florrets 24 large bay scallops 2 cups soba noodles, cooked (2 pkg Ramen noodles, cooked may be substituted) 1/2 cup chopped fresh mint leaves, plus sprigs to garnish Additional tamari (or soy sauce), to taste Two hours before meal: Heat the orange juice until it is reduced to a quarter of its original volume. Remove from heat and add orange juice concentrate. Let cool.

Pad Thai Pad Thai From Family Fun 1/2 pound dried rice noodles, linguine width 1/4 cup Asian fish sauce 3 tablespoons sugar 2 tablespoons soy sauce 1 tablespoon water 1/2 teaspoon dried red chili flakes (optional) 1 egg, lightly beaten 3 tablespoons vegetable oil 1 tablespoon chopped garlic 1/4 pound skinless, boneless chicken, cut into bite-size pieces 1/4 pound shrimp (about 10 to 12 medium or 14 to 16 small) 1 cup shredded carrot 2 cups fresh bean sprouts 1/2 cup chopped scallions 3 tablespoons freshly squeezed lime juice Chopped peanuts (optional)
  1. Bring a large pot of water to a rolling boil. Add the noodles and turn off the heat. Let them stand for 10 minutes, using tongs or two forks to separate the strands as they soften and turn from translucent ivory to white.

Thai Beef Soup Along with Larb and MANGO sticky rice, I also made Thai beef soup! Ingredients: 4 cups beef stock 2/3 cup veggie oil 3oz rice vermicelli noodles 2 shallots 2 garlic gloves 1 inch gingerroot 1 tenderloin cut into strips 2 tbsp green curry paste 2 tbsp soy sauce 1 tbsp fish sauce Cilantro to garnish 1. Heat oil in a wok or pan, add 1/3 of noodles fry until crispy and drain on paper towels.
