 <description>&lt;p&gt;I made these after watching a Hell&#039;s Kitchen clip on Hulu of the Hell&#039;s Kitchen sous chef, Scott, making them (clip below).  He serves them with wilted arugula, &quot;micro-greens&quot; (don&#039;t know what those are--little tiny plants, I guess?) and sauce, but I just paired them with some parmesan risotto, and I imagine they&#039;d be just fine served on their own.  They&#039;re a party pleaser!&lt;/p&gt;

 <description>&lt;p&gt;I was watching Martha Stewart&#039;s show last night, in which she made Portobello mushroom fries. As a big foodie, I was suprised that I&#039;d never seen or heard of this recipe before. I googled around to find others and thought this one by the Denver Post looked simple. Plus, they complimented the fries with a lemon garlic aioli (my weakness), which I think tastes fantastic on most fried foods. Martha&#039;s recipe called for a ponzu dipping sauce, which I&#039;ve also included in this post.&lt;/p&gt;

 <title>Really yummy Brown Rice, Broccoli and Tofu Casserole</title>

 <description>&lt;p&gt;I saw this on Tastespotting.com and had to try it.  Originally the recipe did not call for tofu but I really had a desire to add it and add some quality protein to the dish.&lt;/p&gt;
&lt;p&gt;The original recipe calls this a pie, kind of like a quiche but I think of it more like a layered casserole.  &lt;/p&gt;
&lt;p&gt;It stores well in the refrigerator and by using a 9 x 9 square casserole dish you get 9 - 4 ounce portions.  The original recipe suggests serving this with a fresh salad of spring greens and a dollop of salsa.  I had a small kale salad and no salsa, wasn&#039;t in the mood.  Sorry no photos from my version, digital camera fell in a sink fill of water a few weeks ago. Darn thing is DOA.&lt;/p&gt;
&lt;p&gt;I entered all the info in NutritionData.com for a complete nutrition profile and I&#039;ll post that at the end of the directions.&lt;/p&gt;
