These have to be one of my all-time favorite cookies. Super easy to make, and so delicious!

Cook Time: 15 Min + time for cooling afterwards.

Ingredients:

* 2 cups white sugar
* 1/4 cup butter or margarine
* a pinch of salt
* 1/2 cup milk
* 1/3 cup unsweetened cocoa powder (or about 4-5 tablespoons)
* 3 cups quick cooking oats
* 1/2 cup smooth peanut butter (if you prefer crunchy, use more... about 3/4 cup)
* 1 teaspoon vanilla extract

Directions:

1. In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute.
2. Turn off heat and add the quick cooking oats, peanut butter, and vanilla; mix well.
3. Scoop cookie mounds onto wax paper/silpat lined cookie sheet (a ice cream scoop
works great), let cool.

Sometimes I cheat and put the pan in the freezer to make them cool faster, but maybe you have more will-power than I do! Laughing out loud

    My mom makes these all the time. She loves them. I'm not a huge chocolate fan so they're not my favs. Smiling

    I just had these. They were selling them at a pumpkin patch. I thought they tasted pretty good.
