My fave coffee shop sells this all the time and I fell in love with it. I've went thru millions of recipes and this is the best one. Enjoy!

1 (18.25 ounce) package lemon cake mix
1 1/3 cups vegetable oil
4 eggs
1 (3 ounce) package lime flavored gelatin mix
3/4 cup orange juice

1/2 cup butter
1 (8 ounce) package cream cheese
3 tablespoons fresh lime juice
4 cups confectioners' sugar

Combine cake mix, gelatin mix, oil, eggs and orange juice. Pour into three 8 inch cake pans. Bake according to instructions on box. Allow to cool, then frost.
To make the frosting: In a large bowl, beat the butter and cream cheese until light and fluffy. Add lime juice and confectioners sugar. Mix well.

If this is as good a Key Lime Pie, I may have to give it a go.

I think it's better, because I don't even like Key Lime Pie. Let me know if you like it.

    My Meatloaf Recipe

    Thu, 09/14/2006 - 12:15pm

Ok bear with me with this as I usually eyeball everything but here goes:

    1 pound of ground beef
    1 pound of ground pork
    1 egg
1 cup of italian style bread crumbs
    small chopped onion
1 heaping tablespoon of sour cream
    1 teaspoon of chopped garlic
    1 squirt of deli mustard
1 packet of Lipton Onion Soup mix
    dash of worschester sauce
few dashes of dried parsley flakes MeatloafMeatloaf
mix all ingrediants in a bowl and form a football shape. if it seems a little "wet" add more breadcrumbs. drizzle ketchup all over the top. line cookie sheet with foil add a lil oil to foil. bake at 350 for a good 45 minutes. remove from oven and let it settle for 10 minutes. slice and serve!!!!!!!

Layla, my hubby does the same. He works at an AFB and works rotating 24/7 shifts. It sucks. Sad

This cake sounds delish. It REALLY needs to cool down so I can start running again to counter the weight gain from all these new recipes! lol

I love baking, but I'm not any good at it. The thing about baking is that you absolutely need the right tools, pans, and exact measurement. Since I don't have all that, I cant give it a good try.

    YumYum

Sweet C - we tried your meatloaf recipe tonight, it was awesome! Hubbin (as JV says) and I both thought it was the most moist, tastiest meatloaf we've ever had!! (I only drizzled ketchup on 3/4 of it, because hubbin hates ketchup.)

You guys will think Im exagerating, but in Spain..... Yes, I know I complain alot and that alot of my sentences start with "In Spain" LOL

But yes, they do not have ready mixes for baking in as many selection as they do in the US. I went to the biggest supermarket chain here and they only had Chocolate brownie mix, white cake mix and a whole bunch of flan mixes....THERES NOTHING TO BE FOUND HERE!!!!

LOL Yay...I think most my sentences start with "In Finland" or end with "over here". I'm afraid I sound like that girl from American Pie "This one time at band camp..."

Anyway, I can't use any of these short cuts either and always have to make everything from scratch.

LOL Twinkle Europeans are way different than americans.. here in Spain everything is made from scratch too

LOL guys. My friends used to tease me..."this one time, on the ranch..." I guessed I talked about that summer a lot.

I don't think I've ever actually used a box cake mix. I'm a militant baker. LMAO.

Oh yes, thats why europe is way healthy but way inconvenient. One more thing.... FAMILY SIZE does not exist, not even big pasta jars like Prego. everything is teeny tiny. If you have a big family here you would have to buys tons of small packages. nothing comes big absolutely nothing.

When you go out to dinner beverages and portions are tiny! LOL like half of what you get in the US

I need to move to Europe then. I always get way too much food when I go out. I order off the kids menu whenever they'll let me. Well, sometimes.
