Meat Loaf Muffins w/Pumpkin

This should really be titled "Cleaning Out My Fridge Meat Loaf Muffins", but hey, the pumpkin title sounds better. It's getting colder here in New England which makes me crave down home comfort food. My usual go-to food is mac and cheese, but I didn't feel like spending the time on that last night. I haven't been home much in the past couple of weeks so my fridge is kind of sad. I had some ground turkey, left over canned pumpkin, one apple, fresh rosemary, some various cheeses, eggs, half a red onion, milk, vanilla yogurt and water. And various condiments. This is what I ended up whipping up...

1 lb ground lean turkey
2/3 C canned pumpkin
1 egg
1/4 red onion, diced
1 clove garlic, crushed
1/2 granny smith apple, shredded
2 T teriyaki sauce
2T honey bbq sauce + 2T for topping
2/3 C planko or plain bread crumbs
2 T grated fresh parmesan
2 or 3 sprigs of fresh rosemary, de-leaved and roughly chopped
salt and pepper

Preheat oven to 350 degrees. Spray a muffin tin with cooking spray. In a small skillet, sautée the onion and garlic until tender. Meanwhile, in a large bowl, add all remaining ingredients except for the reserved bbq sauce. Add onion and garlic and mix well. Spoon even amounts of meat mixture into prepared tins. Top each "muffin" with a small amount of bbq sauce. Bake for 25 minutes or until cooked through.

I'm not going to lie- I was pretty convinced that these would be crap, but they are REALLY good! They are a little on the sweet side as far as meat loaves go, but delicious all the same. Replacing the apple with some carrot would probably fix that. And to be perfectly honest I don't measure things when I cook, ESPECIALLY when I am making it up, so the above amounts are my best guess. The only thing I am concerned about it the amount of bread crumbs, so add until the mixture isn't really wet anymore. I love the fact that I snuck in some nutritious things like pumpkin. There is a similar recipe on Cooking Light (but it uses beef) if you want to check out the calorie contents and all that good stuff.
