I haven't used iWeb in the last couple years, but unless they added a feature, iWeb only uploads to moble me (.mac when I did it) and to the local hard drive. To upload the site to the host then requires getting an ftp program (I used CuteFTP).
As to your question, most hosts would be interchangeable. I used godaddy just because I got the domain from them, but I wasn't pleased with their insanely complex website.
